“Lavar o arroz antes de cozinhar não é recomendado, pois leva à perda de vários nutrientes durante esse processo. O arroz possui alto valor nutricional fornecendo ferro, potássio, fósforo, magnésio, vitaminas B1, B2, B3, B6 e proteínas. Quando pegamos o grão seco e lavamos, boa parte desses nutrientes acaba se perdendo com essa água”, disse a nutricionista Jéssica.
De acordo com uma nutricionista especialista no assunto, alguns pontos devem ser levados em consideração para poder responder a essa pergunta. A primeira e mais importante é a informação nutricional sobre o arroz. Poucos sabem, mas o grão que está presente no dia a dia é muito bom e rico em nutrientes para nossa saúde, como sais minerais variados e vitaminas do complexo B.
“Muitas pessoas lavam o arroz por causa desse pó branco (que acaba deixando a água de lavagem branca), porque consideram que é sujeira que vem com o arroz ou algum tipo de produto químico. No entanto, esse resíduo é do próprio cereal, que passa por um processo de polimento para deixar os grãos lisos e brancos”, acrescentou.

“O ideal é que nenhum arroz seja lavado e até é recomendado olhar na embalagem se tem essa recomendação. O que acontece é que, como o arroz integral, por exemplo, retém sua casca protetora, ocorrem perdas relativamente menores no momento da lavagem do que no arroz branco que teve essa casca retirada durante o processamento. O arroz parboilizado também terá perdas menores em relação ao arroz branco, mas ainda há perdas”, afirma.
